A good Caesar salad gets elevated to GREAT with a delicious Caesar Dressing. This dressing tastes fresh and bright.
Use high-quality white anchovies. It makes all the difference to elevate your salad to its full potential.
Yield 6 servings
3 oz. anchovy fillets in olive oil, 1 oz. chopped for the garnish
1 Tbsp dijon mustard
2 lemons, juiced
2 garlic cloves
½ cup olive oil
Salt and pepper
3 romaine hearts, halved
1 cup grated parmesan cheese
Preheat grill on high heat.
In a food processor, add 2 oz. anchovies, mustard, lemon juice, garlic, and olive oil. Blend to combine. Season the dressing with salt and pepper to taste and set aside.
Quickly grill the halved romaine hearts, cut side down until just a slight char is on the romaine.
Place the grilled romaine on a large platter or individual plates. Drizzle the dressing over the lettuce and top with parmesan cheese, chopped anchovies, and croutons if using them.
Garnish with the additional 1 oz. chopped anchovy fillets and ground pepper.
