Peaches remind me of summer. This Peach and Champagne Granita is so simple to make and absolutely delicious and refreshing.
If you are looking for something to beat the heat or bring you that nostalgic summertime feeling, this granita is the recipe of choice.
Yield 5 cups
5 cups of peaches, skinned, pitted and sliced
1 cup sugar
2 mint sprigs plus leaves for garnish
Inch of salt
2 Tbsp fresh lemon juice
1½ cups champagne
In a medium-size pot on medium-high heat, add half of the peaches, surge, mint sprigs, salt, and ¼ cup water. Bring to a boil while stirring to dissolve the sugar. Once the sugar is dissolved, remove the mint sprigs and pour the syrup into the food processor or blender. Add the lemon juice and remaining peaches and puree until smooth.
Pour the mixture into a 9 x 13-inch pan. Stir in the champagne. Cover the pan and freeze for 3 hours, scraping the mixture with a fork every hour until the mixture is frozen and scraped to fluffy crystals. Cover and continue freezing for 8 hours or more.
Scoop into small bowls, garnish with a slice of peach or mint leaves, and serve.
