This is a simple sweet, and savory appetizer. Perfect for making when you are limited on time. It is an ideal pairing with champagne, prosecco, or sparkling wine.  
1½ cups red grapes
2 tsp balsamic vinegar
2 tsp olive oil
Salt and pepper
1 cup ricotta cheese
¼ cup lightly salted pistachios, finely chopped
Preheat oven to 400℉
Combine the grapes, vinegar, and oil in a baking dish and stir together. Season with salt and pepper to taste. 
Bake the grapes for 20 - 30 minutes. The grapes should be juicy and a bit wilted. Remove the grapes from the oven and let cool to room temperature.
Spread the ricotta on a small dish. Spoon the grapes over the ricotta and sprinkle with the pistachios. 
Serve with crackers or crostini.
