We love soba noodles. They are gluten-free, low in fat, and high in protein. Combining them with a sesame ginger dressing is the absolute best. 
 
Plus, this recipe is perfect for a simple and healthy lunch or dinner. 
 
Yield 2 servings
 
¼ cup rice vinegar
2 Tbsp tamari
1 tsp sesame oil
1 tsp grated fresh ginger
1 garlic clove, mashed
½ tsp maple syrup
8 oz. buckwheat soba noodles
1 avocado, sliced
1 cup snap peas
4 red radishes, sliced thin
1 small carrot, cut into matchsticks
1 cup broccoli sprouts
Lemon slices
Black sesame seeds
 
Whisk together the vinegar, tamari, sesame oil, ginger, garlic, and maple syrup in a small bowl. Set the dressing aside. 
 
Cook the noodles per the package directions. Drain and rinse under cold water. 
 
Toss the noodles with half the dressing and divide them into two bowls. Top the noodles with avocado, snap peas, radishes, carrot, and broccoli sprouts. Add 2 lemon slices to each bowl and sprinkle sesame seeds. 
 
Drizzle with additional dressing or tamari if desired.
