Homemade granola is one of my favorite breakfast items if I am craving something sweet. It is also a great snack.
You can eat it plain or add some fresh berries, coconut, cocoa nibs, dried fruit, or goji berries on top.
If you like to eat it with milk, try almond milk, pistachio milk, macadamia nut milk, oat milk, or dairy milk.
Yield 2 cups
2 cups gluten-free sprouted oats
½ tsp ground cinnamon
Pinch of salt
6 Tbsp natural peanut butter
¼ cup maple syrup
½ tsp vanilla extract
Preheat oven to 325℉ and line a baking sheet with a silicone mat or lightly grease with avocado oil.
Add the oats, cinnamon, and salt to a medium-size bowl and stir.
In a small skillet, melt the peanut butter and maple syrup together until smooth. Once melted, stir in the vanilla.
Pour the peanut butter mixture into the bowl and stir to combine.
Spread the mixture on the prepared baking sheet.
Bake for 15 - 20 minutes, stirring the mixture halfway through. Once done, the granola should be lightly browned. Remove it from the oven and let it cool.
Once cool, keep the granola in an air-tight container for up to two weeks.
Just Salt It, and enjoy!
