This is the perfect mid-morning or afternoon snack. When you feel like you need just a little something to energize you, these bites will do the trick. Add in a large glass of water and you will be ready to continue seizing the day!
Yield 12 servings
⅔ cup crunchy natural peanut butter
1 cup old-fashioned or sprouted gluten-free oats
¼ cup walnuts, finely chopped
¼ cup unsweetened shredded coconut
½ cup ground flax seeds
2 Tbsp honey
Mix all the ingredients together in a bowl. Once combined place the bowl in the refrigerator for 15 minutes. 
After the dough has called for 15 minutes roll the dough into 12 balls. Place the ball into a container with a lid and store them in the refrigerator. 
The bites can last for up to one week in the refrigerator, but they only last a few days in mine. They are just too good!
