Chia pudding is a healthy and fresh breakfast or snack. It is simple to make, and you can use any fruit you like. Plus, you can add additional toppings like nuts, coconut, or dried fruits. 
 
Yield 4 servings
 
1 can organic coconut milk
2 cups diced mangos
½ cup chia seeds
Toppings of your choice 
 
Blend the coconut milk and 1 cup of mango in a blender. Pour the mixture into a bowl and stir in the chia seeds. Once combined, pour half of the mixture into 4 small bowls or jars. Layer a few mangos on each. Next, top with the rest of the coconut mixture and another layer of mangos on the top. Cover each pudding with plastic wrap and let it sit in the refrigerator for at least 2 hours and up to 5 days.
