This is a fabulous dip to keep around for snacks or to make for a gathering. It is very simple to put together yet provides a punch of flavor.
8 oz. block of feta, drained
¾ cup Greek yogurt
1 lemon, zested
3 Tbsp olive oil + more for drizzling
1 tsp red chili flakes
2 Tbsp Italian parsley, chopped
2 Tbsp pistachios, chopped
Place the feta, yogurt, lemon zest, and olive oil into a food processor and blend until smooth. Scrape the sides of the bowl as needed. Refrigerate until ready to serve.
To serve, spread the whipped feta onto a plate and make indentions with a spoon for the oil. Drizzle olive oil over the feta and top with chili flakes, parsley, and pistachios.
Serve with crackers, veggies, or crostini.
