We love these lettuce wraps. They are perfect for a light dinner or lunch. They are full of flavor and simple to make. I like to make a double batch, so I have plenty of leftovers during the week. 
Yield 4 servings
Turkey Marinade
1 lb ground turkey
1 clove garlic minced
1 Tbsp tamari
1 Tbsp rice vinegar
1 tsp sesame oil
¼ cup + 1 Tbsp tamari
2 Tbsp rice vinegar
1 tsp sugar
2 tsp sesame oil
 2 Tbsp hoisin sauce
1 tsp cornstarch
1 Tbsp olive oil
1 cup minced red bell pepper
2 tsp chives, minced + more for garnish
2 tsp fresh ginger, minced
¼ tsp red pepper flakes
1 can water chestnuts, minced
1 head of romaine lettuce
Sriracha sauce, for garnish
Place all the turkey marinade ingredients in a medium-sized bowl and stir to combine. 
Combine all the ingredients for the sauce in a small bowl and whisk to combine. 
In a large skillet, heat the olive oil on medium-high heat. Add the turkey mixture, bell pepper, chives, ginger, and red pepper flakes, and stir until the meat is cooked through. Next, add the water chestnuts and sauce. Continue cooking and stirring until most of the liquid has evaporated. 
Serve in lettuce cups and top with a sprinkle of chives and sriracha sauce.
