These delicious tomatoes are a perfect side dish to your main entrees or pair perfectly with a green salad. The warm goat cheese adds a tangy, satisfying flavor to the tomatoes. 
Yield 3 servings
3 large tomatoes
¼ cup gluten-free panko breadcrumbs
¼ cup crumbled goat cheese
1 Tbsp olive oil
1 Tbsp grated parmesan cheese
1 clove garlic minced and mashed
Pinch of salt and pepper
1 tsp finely chopped parsley
Preheat oven to 400℉
Slice the top off of the tomatoes.
In a small bowl, combine the panko, goat cheese, olive oil, parmesan, garlic, and salt and pepper. Place the mixture on top of the tomatoes and bake. Bake until the tops are lightly brown. Approximately 10 minutes. 
Remove the tomatoes from the pan and place them on a serving platter or individual plates. Sprinkle with parsley and serve warm
