These dairy-free truffles are perfect for the holidays or anytime you need a simple and delicious dessert. They are incredibly decadent and well as gluten-free and vegan. 
 
Yield 16 truffles 
 
9 oz. dark chocolate chips or chunks
⅓ cup full-fat coconut milk
¼ cup almond butter
¼ tsp vanilla extract
 
Ground almonds
Unsweetened cocoa powder
 
Put the chocolate, coconut milk, and almond butter in a bowl and microwave for 30 second intervals, stirring in between. Once the mixture is smooth and combined, stir in the vanilla. You can also use a double boiler in replacement of the microwave. 
 
Place plastic wrap directly on the surface of the chocolate mixture and refrigerate for 2 hours. 
 
Use a small scoop to scoop the chocolate mixture and roll them in your hands to form balls. Roll the balls into the ground almonds or the ground cocoa powder. 
 
Store in the refrigerator.
