My new favorite snack! It is quick and easy to make and makes 20 of them so you have plenty for the week. 
Yield 20 balls
2 cups dates, pitted
1 cup unsweetened shredded coconut
½ cup almond butter
¾ cup almonds
¼ cup pistachios
2 Tbsp melted coconut oil
Blend all the ingredients in a food processor. Every few minutes, stop the food processor and scrape the sides with a rubber spatula. Once the ingredients are finely chopped and sticking together, roll the mixture into 1-inch balls. 
Store in the refrigerator. 
Just Salt It, and enjoy!
