This is a fresh and delicious vegan sandwich. I recommend serving it open-face with a spring lettuce mixture on the bottom and top with sprouts, chopped cucumbers, or tomatoes. Or you can serve it as is. The mash can also be used as a dip with crackers, chips, or a variety of fresh veggies.
Yield 3 - 4 servings
1 15.oz can cannelloni beans, rinsed
7 oz. marinated artichoke hearts, finely chopped
1 large avocado, mashed
1 Tbsp olive oil
1 Tbsp fresh dill, chopped
¼ cup cilantro, roughly chopped
1 tsp fresh lime juice
Salt and pepper to taste
Add all the ingredients, besides the bread, to a bowl and stir to combine.
Toast the bread of your choice and top with the mash.
Just Salt It, and enjoy!
